Madeira Base Chocolate Cream Strawberry Cream Vanilla Cream

To prepare a delicious Madeira cake with various creams, we will start by making the base. This is essential for the structure of the cake, giving it a fluffy and flavorful texture. In a large bowl, we will mix the soft butter well until it becomes creamy. Then, we gradually add the sugar, continuing to mix until the mixture becomes fluffy and immaculate white. It is time to add the eggs, one by one, ensuring that each egg is well incorporated before moving on to the next.

After adding the eggs, we begin to gradually incorporate the sifted flour and baking powder, alternating with milk. It is important to do this carefully, using a spatula to avoid lumps. Once we have obtained a homogeneous mixture, we pour the batter into a pan lined with baking paper and bake in a preheated oven at 180 degrees Celsius for about 30-35 minutes or until a toothpick inserted in the center comes out clean. We let the base cool on a rack.

In the meantime, we take care of the creams. We start with the chocolate cream, melting dark chocolate in a bain-marie, stirring constantly to avoid burning. After the chocolate has cooled slightly, we will incorporate it into the whipped cream, making sure to achieve a uniform and airy mixture.

For the strawberry cream, we mix fresh strawberries with sugar and let them sit for a few minutes to release their juice. After that, we mash them and combine them with mascarpone and a little whipped cream, thus obtaining a fine and aromatic cream.

The vanilla cream is prepared by boiling milk with a split vanilla pod. Separately, we mix the egg yolks with sugar and cornstarch, then gradually add the hot milk. We put the mixture on low heat and stir continuously until it thickens. After it cools, we add a little butter for a richer texture.

Now, for assembling the cake, we cut the base into three layers. We spread a layer of chocolate cream on the first layer, followed by a layer of strawberry cream, then place the second layer. We repeat the process, and at the end, we cover the entire cake with vanilla cream. We decorate as desired and let the cake chill in the fridge for a few hours to set.
