Walnut Roll
To create a delicious and comforting dessert, we start by preparing the base. The eggs are beaten with sugar in a generous bowl, mixing them vigorously with a whisk or mixer until the sugar completely dissolves and the mixture becomes fluffy and a deep yellow. This step is essential, as the incorporated air will make the base fluffy and rise beautifully during baking.
Once the eggs and sugar are well mixed, we add the milk, oil, and the ammonium quenched with vinegar or lemon juice, which will help the mixture rise. We mix again carefully to ensure all the ingredients are homogeneous. Then, we begin to add the flour, little by little, being careful to stir gently with a spatula. It is important not to mix too much to preserve the air in the mixture, which will contribute to the fluffy texture of the base.
After obtaining a homogeneous mixture, we pour the batter into a 25/35 cm baking pan that we have lined with parchment paper. Now, our base is ready to be baked. We place it in the preheated oven at 170 degrees Celsius and let it bake for 25-30 minutes. It is important not to open the oven door in the first 20 minutes to allow the base to rise evenly.
Meanwhile, we take care of preparing the syrup. In a saucepan, we combine water, sugar, and cocoa, placing the mixture over medium heat. We stir constantly until the sugar dissolves and the syrup comes to a boil, thickens, and becomes slightly viscous. After it has boiled for a few minutes, we remove the saucepan from the heat and add the butter, stirring until it completely melts and incorporates into the syrup.
Once the base is baked, we take it out of the oven and let it cool slightly. Then, we cut it into the desired shapes: squares or rectangles, depending on our preferences. Using a spoon, we generously pour the syrup over each piece of base, ensuring that every bite will be soaked with chocolate flavor. Finally, we sprinkle ground walnuts on top, but we can also add other ingredients such as coconut, ground hazelnuts, colorful candies, or chocolate chunks to give our dessert a festive and appealing look. This simple yet flavorful dessert will bring joy and satisfaction to any meal!
