The dough is the perfect base for a delicious tart and it is essential to prepare it correctly. We start the night before to ensure that the dough will be tender and flavorful. In a bowl, we mix the softened butter at room temperature with a pinch of salt and sugar until we obtain a creamy, airy mixture. This will provide a fine texture and rich flavor. Then, we add a fresh egg, continuing to mix to incorporate it well into the mixture.

It is time to bring the natural flavors to the forefront. We zest the lemon and orange, adding them to the dough; these citrus flavors will give a fresh and invigorating taste. After mixing well, we start adding the flour, but not directly, rather in a rain, continuously stirring with a wooden spoon. This technique helps us avoid the formation of lumps. Once the dough becomes homogeneous, we knead it gently and form a ball which we wrap in plastic wrap. We place the dough in the refrigerator until the next day, allowing it to rest and become tender.

When we are ready to continue, we take care of the filling. We take 3-4 ripe strawberries, cut them, and place them in a blender, adding a little water, sugar, and starch. We blend everything until we obtain a smooth paste. We transfer the obtained mixture to a saucepan and place it on low heat, stirring constantly until it thickens slightly. This will form the base of our sauce. We then slice the remaining strawberries, drizzle them with lemon juice, add vanilla sugar, and combine them with the strawberry sauce.

We take the dough out of the refrigerator and roll it out on a floured surface, being careful not to make it too thick. We grease a 26 cm diameter baking pan with a little butter and lay the dough sheet so that it covers both the bottom and the edges of the pan. We gently press the dough to settle well, removing the excess dough from the edges and pricking the dough here and there with a fork to prevent puffing.

We pour the strawberry mixture over the prepared dough, and for an extra flavor, we sprinkle the orange zest on top. From the remaining dough, we cut thin strips that we place over the strawberry filling to create a decorative pattern. We brush these strips with egg yolk to give them a golden color and sprinkle finely ground nuts on top for a crunchy taste.

We place the tart in the preheated oven at moderate heat, where it will stay for 20-25 minutes until it becomes golden and appetizing. We let it cool slightly before slicing, and then it is ready to serve. This strawberry tart will surely become a favorite among family and friends. Enjoy your meal!
