Preparation time: 30 minutes
Chilling time: 2 hours
Total time: 2 hours 30 minutes
Servings: 10
Ingredients:
For the cake base:
- 200 g digestive biscuits (or chocolate ones for a more intense flavor)
- 100 g melted butter
- 2 tablespoons sugar (optional, depending on desired sweetness)
For the cheesecake filling:
- 500 g cottage cheese (or cream cheese for a smoother texture)
- 200 g sour cream
- 150 g powdered sugar
- 1 packet of vanilla
- 10 g gelatin
- 50 ml water for gelatin hydration
For decoration:
- 300 g fresh strawberries (or other seasonal fruits)
- 100 g strawberry jam (or peach jam for an exotic touch)
- Mint leaves for decoration (optional)
Instructions:
1. Preparing the base:
Start by crushing the biscuits in a food processor until you get a fine consistency. Add the melted butter and sugar, mixing until the mixture is homogeneous. Spread the obtained mixture in a springform pan, pressing well to form an even base. Place the pan in the refrigerator for about 30 minutes to firm up.
2. Making the cheesecake filling:
Soak the gelatin in cold water for 10 minutes. Then, heat the gelatin in a small pan without letting it boil, until it completely dissolves. In a large bowl, combine the cottage cheese, sour cream, powdered sugar, and vanilla. Mix everything with an electric mixer on low speed until you achieve a smooth cream. Add the dissolved gelatin and mix again, ensuring it is well incorporated.
3. Assembling the cake:
Remove the base from the refrigerator and spread the strawberry jam on it, making sure to cover the surface evenly. Carefully place the ring of the cake pan around the base. Pour the cheesecake filling over the base, smoothing the surface with a spatula. Cover the cake with plastic wrap and let it chill in the refrigerator for at least 2 hours, or until the filling has set.
4. Decorating the cake:
Once the cake has set, carefully remove the ring from the pan. Decorate with fresh strawberries, cut in half or slices, and add a few mint leaves for added freshness. You can glaze it with a thin layer of strawberry jam for a shiny appearance.
Helpful tips:
- You can replace strawberries with other fruits like raspberries, blueberries, or peaches to create interesting variations of this cake.
- If you prefer a more intense flavor, add a little lemon juice to the cheesecake filling.
- The cake can be served with a scoop of vanilla ice cream or whipped cream for an extra touch of flavor.
