Seed Cake
This little cake is a true delicacy for seed lovers, being not only tasty but also very nutritious. Compared to other sweets, this recipe proves to be much healthier, having a rich content of essential nutrients. Besides being a better choice health-wise, the cake is very quick to prepare, making it perfect for moments when you crave something sweet but want to stay fit.
The first step in preparing this cake is to take care of the seeds. Choose your favorite seeds, whether they are sunflower seeds, pumpkin seeds, or almonds, and use a food processor to chop them. It is important not to chop them too finely, as we want them to remain small pieces that will provide a pleasant texture to the cake. If the seeds are too large, you risk not being able to cut the cake evenly at the end.
In a large bowl, beat the egg whites with the sugar until you obtain a firm foam. This mixture will act as a real "glue" for the seeds. Then, transfer the egg white and honey mixture into a bowl over a steam bath and let it warm up for 5-10 minutes, stirring constantly. This step is essential to achieve a more stable consistency, which will help the seeds stick together.
After obtaining a homogeneous composition, add the chopped seeds and a pinch of salt. Mix everything very well so that the seeds are completely coated with the egg white "glue". Now is the time to start assembling the cake. Take the first wafer sheet and add a generous layer of the seed mixture. Continue with a second wafer sheet, pressing gently to even out the composition. Repeat this process until you reach the fourth sheet, which will be the last.
After assembling all the sheets, cover the cake with a clean napkin and place a heavier object on top, such as a book. This will help the cake to compact and maintain its shape. Leave it to press for a few hours, and if you have patience, even overnight. After it has been pressed, cut the cake into desired shapes and enjoy a healthy and delicious dessert. Enjoy your meal!
Ingredients: Napkin sheets, hazelnuts, pistachios, walnuts, almonds, pumpkin seeds, sunflower seeds, 4 egg whites, 100 grams of sugar, 3 tablespoons of honey, a pinch of salt.
