Plum dumplings
To prepare a delicious recipe for plum dumplings, we start by peeling the potatoes. We choose quality potatoes that are firm and blemish-free. After washing them well, we cut them into medium-sized cubes to ensure even cooking. We put them to boil in a pot of cold water with a teaspoon of salt, making sure the salt helps enhance the flavor. We let the potatoes boil until they become soft, which takes about 15-20 minutes.
In the meantime, we take care of the plums. We wash the plums thoroughly under a stream of cold water and cut them in half, carefully removing the pits. We place the plum halves in a bowl and sprinkle them with four tablespoons of sugar. This step is essential, as the sugar will extract the juice from the plums, enhancing their natural flavor. We let the plums macerate for 10-15 minutes.
When the potatoes are cooked, we drain them and transfer them to a bowl. Using a blender or a potato masher, we turn them into puree. The puree should be smooth and lump-free. Once we achieve the desired consistency, we add the beaten eggs, oil, a pinch of salt, vanilla essence, and gradually the flour. We knead the dough until it becomes elastic and homogeneous. It is important not to over-knead to avoid toughening the dough. We let the dough rest for five minutes to relax the gluten.
During this time, we prepare the breadcrumbs. In a saucepan, we melt the butter over low heat, then add the breadcrumbs. When the breadcrumbs start to turn golden and crispy, we sprinkle in the sugar and mix well until everything is homogeneous. Turning off the heat, we ensure that the mixture is fragrant and pleasant.
After the dough has rested, we take a small portion and form balls, placing half a plum in the center of each. It is important not to use whole plums, as the dumplings will be too large and difficult to boil. With the help of a spatula, we carefully place the dumplings in the boiling water. We let the dumplings boil on low heat, and when they rise to the surface, we know they are ready.
We remove each dumpling with a slotted spoon and roll them in the breadcrumb and sugar mixture, which will give them a crispy and sweet taste. These delicious plum dumplings can be served hot or cold, but don't be surprised if they disappear quickly from the table! Enjoy them with a vanilla sauce or a scoop of sour cream for an extra flavor boost. Buon appetito!
