Pecan nuts are not very common here, but when I saw them in a supermarket, I didn't hesitate to buy them. Native to North America, these nuts have an intense flavor and a crunchy texture, perfect for adding an extra touch of flavor to any cake. Today, I will present to you a delicious quick cake recipe that is sure to impress family and friends.

To start, we prepare all the necessary ingredients. In a large bowl, we will mix the sugar with the butter until we obtain a creamy and homogeneous mixture. It is essential that the butter is at room temperature, so it will incorporate better into the mixture. Then, we will add the eggs one by one, making sure each egg is well incorporated before adding the next one. We continue with the milk, which will bring a pleasant moisture to the cake.

The next step is to mix the flour with the baking powder, ensuring that no lumps remain. Sifting the flour is an effective method for achieving a finer texture. After we have integrated the dry ingredients, we add the grated carrots, which not only bring a sweet taste but also additional moisture. Finally, we add the finely chopped pecan nuts and mix carefully so that they are evenly distributed in the mixture.

Once we have obtained a homogeneous batter, we pour the mixture into a baking tray lined with parchment paper and place it in the preheated oven at 180 degrees Celsius. The cake will bake for about 35 minutes, or until a toothpick inserted in the middle comes out clean. After baking, we let the base cool completely.

In the meantime, we take care of the delicious cream that will complement the cake. In a separate bowl, we whip the cream until it becomes firm and fluffy. Then, we add the cream cheese, honey, and grated orange peel. We mix well until all the ingredients are integrated, and the cream becomes airy and fragrant. Finally, we melt the chocolate and add it to the cream cheese, mixing gently so as not to lose the fluffiness.

When the base has cooled, we cut it into two equal parts. We place the first part on a serving platter and generously spread it with apricot jam, which adds a sweet and tangy note. On top of this, we spread half of the cream obtained, leveling it well. Then, we place the second part of the base, which we also spread with apricot jam. On top, we put the rest of the cream and decorate with pecan nuts and grated chocolate, which will provide an attractive appearance and a crunchy texture.

After we have finished assembling, we let the cake chill in the refrigerator for at least an hour, to allow the cream to set and the flavors to combine. Once the cooling time has expired, it is time to enjoy this delicious cake. Bon appétit!
