Panna cotta with blackberries
To prepare a delicious blackberry dessert that will surely impress everyone who tastes it, we need to follow a few simple yet essential steps to achieve a smooth texture and refined taste. We start by taking a mixer and adding fresh, well-washed blackberries along with sour milk. We mix at medium speed until we obtain a homogeneous, flavor-rich juice. It is important to ensure that the blackberries are well crushed so that we can enjoy all their flavor. Once we have obtained the juice, we pass everything through a fine sieve, pressing with a spoon to ensure that we extract all the liquid. We discard the solid residues left in the sieve.
In a small bowl, we add 1/4 water and sprinkle the gelatin on top. We let the gelatin swell for a minute. Meanwhile, in a saucepan, we put the sugar together with the liquid cream over low heat, stirring constantly until the sugar completely dissolves, being careful not to let the mixture boil, as we want to keep the creamy texture of the cream. Once the sugar is completely dissolved, we add the swollen gelatin and stir until it completely melts.
Now, we turn our attention to the strawberry jam. In a small pan, we add the jam along with a tablespoon of water and put it over medium heat. We let it boil for about a minute until the jam thickens slightly. After boiling, we strain the mixture to remove any pieces. We combine the blackberry puree with the strawberry jam and the cream and gelatin mixture, stirring well to ensure everything combines evenly. We pass the mixture through the sieve again to achieve a fine texture.
Now, we divide the resulting mixture into 6 glasses, similar to those used for crème caramel, and we place them in the refrigerator for a few hours, but ideally, we should leave them overnight to set well.
For the sauce, we boil water with sugar and liqueur, stirring constantly until we obtain a thick syrup, which takes about 12-15 minutes. Once the syrup has reached the desired consistency, we add the lemon juice and blackberries, being careful not to leave it on the heat anymore. After we finish preparing the sauce, we let it cool slightly. When the dessert has set, we serve it with the blackberry sauce on top, creating a delicious contrast between the creamy textures of the mousse and the tart sweetness of the sauce. This elegant and refined dessert will surely be a hit at any table!
