Pancakes with Cream Cheese
To prepare the delicious pancakes, we start by making the batter. In a large bowl, we add 250 grams of flour, 500 milliliters of milk, two fresh eggs, a teaspoon of sugar, and a pinch of salt. We mix the ingredients well using a whisk or a mixer on low speed until we obtain a smooth, lump-free mixture. It is important to let the batter rest for about 30 minutes so that the gluten in the flour develops, making the pancakes fluffier and more elastic.
Meanwhile, we take care of the cheese cream that will fill the pancakes. In another bowl, we put 200 grams of well-drained cottage cheese, 100 grams of sour cream, a teaspoon of vanilla extract, and 50 grams of powdered sugar. We mix all the ingredients with a spatula or a mixer on low speed until we obtain a smooth and creamy mixture. If desired, you can also add some pieces of fresh fruit or raisins for extra flavor.
Once we finish preparing the cream, we return to the pancake batter. We heat a non-stick pan over medium heat. It is essential not to add oil to the pan, as we want the pancakes to have a light texture and not be too greasy. We pour a portion of the batter into the pan and, using circular movements, ensure that the batter spreads evenly over the entire surface of the pan. We cook the pancake for 1-2 minutes until the edges turn golden and a slight browning appears on the surface. Using a spatula, we flip the pancake to the other side and let it cook for another minute. We proceed this way with all the batter, resulting in a number of delicious pancakes.
Once all the pancakes are ready, we fill them with the previously prepared cheese cream. We take one pancake, place a portion of cream on one half, and fold the other half over the filling. After filling each pancake, we arrange them on a platter and, for a touch of elegance, lightly dust them with vanilla sugar. These cheese cream pancakes are perfect for a special breakfast or a refined dessert. Enjoy them with a cup of tea or coffee, savoring their fine and creamy taste!
