We start preparing our delicious recipe by making a starter that will give our dough an airy texture and a pleasant taste. In a small bowl, we add fresh yeast and dissolve it with a few tablespoons of warm milk. This process is essential because yeast activates better in a warm and humid environment. We add a tablespoon of sugar, which not only stimulates the yeast but also brings a touch of sweetness. Finally, we incorporate 1-2 tablespoons of flour to create a homogeneous mixture. We let the starter sit for about 15-20 minutes, during which it will start to form bubbles and rise, a sign that the yeast is active.

Meanwhile, we take care of the remaining ingredients. In another bowl, we dissolve the remaining sugar in the leftover milk, mixing well to ensure no sugar crystals remain at the bottom of the bowl. This sweet milk will be the base for our dough. We then add the eggs, beaten to a homogeneous state, and a pinch of salt, which will balance the sweetness and enhance the flavors. We mix all the ingredients until we obtain a uniform composition.

After the starter has risen, we add it to the bowl with the milk and eggs. Next, we gradually add the flour, mixing with a spatula or with our hands. It is important to incorporate the flour gradually to prevent lumps from forming. When the dough becomes too heavy to mix with the spatula, we turn into the cousins of the craftsman and get our hands to work. We knead the dough for 10-15 minutes until it becomes elastic and smooth. If necessary, we can add a little more milk or flour to achieve the desired consistency.

Once we have obtained the perfect dough, we cover it with a clean cloth and let it rise in a warm place for about an hour or until it doubles in volume. This rising process is essential to allow the dough to develop and become fluffy. After the dough has risen, we can shape it according to our preferences: either into bread, rolls, or sweet bread.

After shaping, we let the dough rise again for 30 minutes, then we can bake it in a preheated oven at 180 degrees Celsius for 25-30 minutes until it becomes golden and fragrant. The aromas that will spread in the kitchen are definitely worth savoring!
