To prepare a delicious and aromatic rosemary ice cream, it is essential to ensure that we use organic ingredients, so we can fully enjoy their authentic flavors and natural benefits. We start by combining fresh milk and sugar in a saucepan over low heat. It is important to stir constantly, so the sugar dissolves completely and the milk does not burn. As we stir, we will carefully add a sprig of fresh rosemary, preferably chosen from an organic source, to ensure its intense aroma infuses perfectly into the milk.

During the heating process, it is crucial to closely monitor the temperature of the milk. We must not let it reach the boiling point, but just until small bubbles appear on the surface, and the milk becomes slightly frothy. This is a sign that the rosemary aroma begins to release. If you have a kitchen thermometer, it is recommended to turn off the heat when the milk reaches a temperature of 90 degrees Celsius. After removing the saucepan from the heat, we cover the milk and let it cool to room temperature, so the flavors can combine harmoniously.

Once the milk has cooled, we add fresh cream, which will give our ice cream a velvety texture and rich flavor. It is essential to remove the sprig of rosemary before continuing the process, to avoid any unwanted leaves in the final product. We strain the mixture to obtain a smooth and homogeneous liquid, ready to be transformed into ice cream.

If you have an ice cream maker, now is the perfect time to turn it on. Pour the mixture into the machine and follow its instructions, letting it transform into a refreshing delicacy. If you don’t have such a device, don’t worry! You can use a container to put in the freezer. It is important to stir the mixture with a fork or whisk every 40 minutes to prevent ice crystals from forming. Although the final texture will not be exactly as creamy as in the case of gelato, the result will certainly be satisfying and full of flavor.

One evening, I decided to implement this recipe. I had time to stir a few times, but unfortunately, I had to go to bed before giving it all the necessary attention. Even so, the ice cream was extremely good, and the rosemary flavor was surprising and comforting. This simple and refined recipe is perfect to be enjoyed during the summer or whenever you want to indulge in a fresh and natural dessert.

Ingredients

For 6 servings: 500 ml of whole milk, 250 g of crème fraîche (or whipped cream), 150 g of sugar, 1 sprig of rosemary.
