To prepare the delicious spirals with flavored syrup, start by mixing in a large bowl the flour, semolina, dry yeast, creamy yogurt, and warm water. Make sure all ingredients are well integrated and there are no lumps. Cover the bowl with plastic wrap or a clean towel and leave it in a warm place for about two hours, during which the dough will ferment and rise, becoming fluffy and airy.
Meanwhile, prepare the syrup. In a saucepan, add the sugar and water and bring to a boil over medium heat. Stir occasionally to help the sugar dissolve. Once the syrup reaches boiling point, remove the saucepan from heat and add the ground cardamom and a few strands of saffron. The flavors will combine perfectly, and the syrup will take on a golden hue and an inviting aroma. Let it cool slightly.
After the dough has fermented, it's time to shape the spiral. Heat the oil in a deep pan, ensuring it is well heated but not smoking. You can use a cooking plastic bag or, as mentioned, a plastic mustard container, which you will fill with the dough. Cut a small hole in the tip of the bag to form the spirals.
When the oil is ready, start forming the spirals or other desired shapes in the hot oil. Make sure not to overlap them so they fry evenly. Each piece should turn a light brown color, which will take a few minutes. Once fried, remove the spirals with a spatula and let them drain on a paper towel to absorb excess oil.
After all the spirals are fried, carefully place them in the hot sugar syrup. Let them soak for about two minutes so that the flavors penetrate well into the dough. These sweet and aromatic spirals are ideal to be served warm, either as a dessert or a snack, and will surely bring a smile to everyone’s face.
