To prepare these delicious cookies, start by gathering all the necessary ingredients and making sure you have the right utensils on hand. The amount of flour will vary depending on several factors, such as humidity in the air or the quality of the flour, so it is important to adjust the quantity during preparation.

In a large bowl, crack the eggs and add the sugar. Use a mixer to beat them together until the mixture becomes frothy and light in color. Then, incorporate the oil and lemon juice or another flavored liquid, such as vanilla or orange essence. Mix again to combine all the ingredients.

The next step is to add the baking soda, mixing well to distribute it evenly in the dough. Start adding the flour, 100 grams at a time, mixing with the mixer. Continue adding flour until the dough becomes more compact. Once you reach a firmer consistency, it's time to switch to manual mixing. Take a handful of flour and incorporate it into the dough until it becomes firm enough.

Let the dough rest for 10 minutes, covered with a damp towel, to relax and facilitate the shaping of the cookies. Prepare the cookie shape by attaching it to the meat grinder. Start the cookie forming process, ensuring the dough is pliable enough. If you don't have a special shape, you can use a cookie press, but make sure the dough is softer. Another option is to roll the dough into a sheet about 5 mm thick, cut shapes with a knife, and create sticks.

Preheat the oven to a medium temperature. Place the cookies on a baking tray lined with parchment paper, leaving enough space between them. Bake the cookies for a few minutes, being careful not to brown them too much; they should be just lightly golden at the edges. Once they are ready, let them cool slightly. You can serve them plain or dip them in melted chocolate and sprinkle colored candies on top for a festive look. This simple and delicious dessert will surely bring smiles to the faces of your loved ones!
