To prepare a delicious cheesecake with cherries, the first step is to take care of the cherries. We take fresh cherries, wash them well under a stream of cold water, then remove the pits using a special tool or a knife, being careful not to crush them too hard. After the pits have been removed, we cut them in half so that their juice and flavor are released during baking.

In a separate bowl, we now prepare the filling. We mix cottage cheese or cream cheese with granulated sugar, vanilla sugar, and coconut. This mixture will add a sweet and fragrant note to the cake. Once the ingredients are well integrated, we add whole eggs and homogenize the mixture until we obtain a smooth and creamy paste.

For the dough, we use a sheet of rolled dough, which we cut into two parts. A larger part will be used for the base of the cake, while the smaller part will cover the cheese filling. With the excess dough, we can create decorative zig-zag lattice, which will give a nice appearance to the cake.

We place the larger part of the dough in a loaf pan lined with parchment paper, making sure to spread the dough evenly. With a fork, we poke the dough here and there to prevent excessive puffing during baking. We add a few tablespoons of the cheese filling, distributing it evenly, and then place the cherry halves on top. We continue to add the rest of the filling, ensuring that the cherries are well covered.

On top, we place the smaller part of the dough, which we poke again with the fork to allow steam to escape during baking. We brush the dough with an egg yolk, which will give a nice golden color to the cake, and then we place the dough lattices on top, brushing them with yolk as well.

The cake is baked in a preheated oven at medium heat for about 30 minutes, or until the dough becomes golden and firm to the touch. After being removed from the oven, we let the cake cool well before cutting it into slices.
