To prepare a sponge cake with caramelized apples, we will start by organizing the necessary ingredients and utensils. We need 4 egg whites, 4 egg yolks, 200 g of sugar, 100 ml of oil, 250 g of flour, a teaspoon of baking powder, vanilla essence or lemon zest for flavor, and a pinch of salt. Additionally, for caramelization, we will need 350 g of sugar and 4-5 apples, preferably autumn varieties, to achieve excellent flavor and texture.

We start by preheating the oven to 180 degrees Celsius. In a large bowl, we will beat the egg whites with a pinch of salt until we obtain a firm foam that forms peaks. In another container, we mix the egg yolks with the sugar until the mixture becomes creamy and light in color. We add the oil and the chosen flavor, mixing well to combine everything.

Once we have a uniform mixture, we begin to incorporate the beaten egg whites, being careful to do this with a spatula, using gentle folding motions to keep the air in the egg whites. Finally, we add the sifted flour along with the baking powder, continuing to mix gently.

Meanwhile, in a heavy-bottomed pot, we put 350 g of sugar to melt over medium heat, stirring constantly until it becomes a golden caramel. Once the sugar has melted and has taken on a pleasant hue, we remove the pot from the heat and carefully swirl the caramel around the walls of the baking pot, ensuring they are evenly coated. It is essential that the caramel does not become too hard, as we will add the sliced apples.

We peel the apples and cut them into thin slices, which we place on the bottom and sides of the pot, sprinkling a few chopped slices on top. These will caramelize beautifully in the oven, adding a delicious flavor to the cake.

After we have prepared all these steps, we carefully pour the sponge batter over the caramelized apples. We place the tray in the preheated oven and bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.

When the cake is ready, we carefully turn it out onto a platter. You will be delighted to see how the caramelized apples rise to the surface, and the cake becomes a true delicacy, moist and fragrant. Serve it warm or at room temperature, and enjoy every slice!
