Yellow bean sour soup with veal bone

Yellow bean sour soup with veal bone keeps the beans whole, simmered with carrot, onion and blanched bone. The broth is tangy, with tomatoes, celery and fresh thyme, and the pods soften without falling apart. I choose young pods, with the beans still small. Prep: 20 minutes. Cook: 45 minutes. Total: 65 minutes. Serves: 6. About 110 kcal and 9 g protein per serving.
Ingredients
- 1 veal bone
- 1500 ml water
- 3000 ml water
- 500 g yellow wax beans in pods
- 1 medium carrot (80 g)
- 1 medium onion (150 g)
- 2 celery stalks (80 g)
- 2 medium tomatoes (300 g)
- 1 teaspoon salt
- 1 yellow pepper (150 g)
- 5 g fresh thyme
- 30 ml apple cider vinegar
- 1/2 teaspoon hot red pepper paste
Preparation
1. Pat the veal bone dry with paper towels. Put it in a pot with 1500 ml water, boil for 5 minutes, then discard the water. 2. Peel and wash the vegetables. Slice the carrot and chop the onion, pepper, tomatoes, celery stalks and thyme. Prepare and wash the pods, then snap them into 2-3 cm pieces. 3. Bring 3000 ml fresh water to a boil. Add the bone, carrot and onion and boil for 15 minutes. 4. Add the pods, celery and tomatoes to the pot. Add 1 teaspoon salt and boil for 20 minutes, until the pods are tender and the carrot has softened. 5. Add the pepper and thyme and boil for another 5 minutes. At the end, adjust the taste with 30 ml apple cider vinegar and 1/2 teaspoon hot red pepper paste.
Notes
Serve with bread while the broth is hot. Young pods soften faster; thick ones with large beans may need another 5 minutes of cooking. Taste before adding all the vinegar, since the tomatoes may already bring enough tang; in summer you can make it more sour. I start about an hour before the meal, and when I make a larger amount I keep the same proportion of pods and water. I don’t rush the 5-minute blanching, by then the foam from the bone has gathered. The soup keeps in the refrigerator for up to 3 days. Green beans can replace the yellow pods in the same amount.
Frequently asked questions
What bone can I use instead of veal bone?
You can use a beef bone with a little meat, about 500 g. Boil it for 25 minutes before adding the pods.
Can I use frozen yellow beans?
Yes, add 500 g straight to the pot without thawing them, and check the texture after 12 minutes of boiling.
What should I do if the soup is too sour?
Add 100 ml hot water and taste again. You can add the same amount of water again if the broth is still too sour.
