We start preparing the delicious zucchini pie by making the dough. In a small bowl, we add the sugar and yeast, then mash them with a spoon until we obtain a liquid mixture. It is essential to keep the bowl in a warm place for 10-15 minutes, so the yeast can rise properly, which will help the dough to grow.

As the yeast does its job, we sift the flour into a large bowl, adding our favorite spices – salt, rosemary, and cumin, which will give the pie a special flavor. After the yeast has risen, we incorporate it into the flour and gradually start adding warm water. We mix the ingredients with a spatula or by hand, and during the kneading process, we add the oil, which will make the dough softer and more aromatic. Once we achieve a homogeneous consistency, we cover the bowl with a clean towel and let the dough rise in a warm place, where it will grow and double in volume.

In the meantime, we take care of the pie filling. We peel the zucchinis and grate them or finely chop them using a food processor. It is important to leave them in a sieve or colander, pressing them occasionally to eliminate excess water. This will prevent the pie from becoming too wet. In another bowl, we knead the cheese until it becomes creamy and grate the cheese, which will add a savory flavor. We add the grated zucchinis, the three eggs, season to taste, and sprinkle with freshly chopped basil. We mix all the ingredients well until homogeneous.

Once the dough has risen, we roll it out on a floured surface, forming an even sheet, but not too thick. We place the sheet of dough in the cooker pot, which we previously greased with a little melted butter to prevent sticking. We add the zucchini filling, leveling it evenly, then cover with the excess dough, forming a delicious crust. We decorate the pie with slices of tomatoes, which add an appetizing appearance, and brush the surface with egg yolk to achieve a golden and shiny crust.

We bake the pie at 150 degrees Celsius for about 55 minutes, until it becomes browned and aromatic. Once it's ready, we let the pie cool gradually in the pot, to stabilize. It is served cold, ideal as an appetizer or snack. Enjoy every bite eagerly, savoring the delightful combination of zucchini, cheese, and spices!

Ingredients

For the dough we need: approximately 300 g of white wheat flour, 2-3 tablespoons of olive oil, 15-20 g of fresh yeast, 100 ml of lukewarm water, salt to taste, a teaspoon of sugar, rosemary and caraway seeds to taste. For the filling we need: 3 eggs, 3 medium zucchini, 100 g of cheese, 200 g of sheep cheese, spices to taste: salt, pepper, rosemary, a few fresh basil leaves. Additionally, we need: 3-4 small tomatoes, one egg yolk for brushing the pie.
