Zucchini Flower Pizzas
Today I will share with you a delicious recipe for zucchini flower pizzas, an emblematic dish of Neapolitan cuisine that will delight your senses. This recipe is perfect for warm summer days when zucchini flowers are abundantly available and are used in various traditional dishes. The delicate aroma of fresh flowers, combined with the fluffy texture of the dough, makes these pizzas a true culinary indulgence.
To start, we need fresh zucchini flowers, which we will carefully clean. Remove the green parts and the pistil, then wash them well under a stream of cold water to remove any impurities. After washing, let them drain in a colander. Now that the flowers are prepared, we can start working on the dough.
In a large bowl, place about 300 grams of wheat flour. Add one fresh egg, which will give the dough a richer texture. In another container, dissolve 15 grams of fresh yeast in about 150 ml of lukewarm water, then pour the mixture over the flour. Start mixing the ingredients with a spatula or wooden spoon until combined.
Continue by adding 10 grams of salt, 50 grams of finely grated Parmesan cheese, and a bit of freshly ground pepper to enhance the dough's flavor. Then, tear the zucchini flowers in half and add them to the mixture. Now it’s time to knead the dough with your hands until it becomes soft and homogeneous. Cover the bowl with a clean towel and let the dough rise for about 2 hours in a warm place, away from drafts.
Once the dough has risen beautifully and become fluffy, it’s time to fry it. Heat a pan with enough oil to cover the bottom. Using a spoon, take portions of dough and form small circles that you will carefully place in the pan. Fry each pizza for a few minutes on each side until golden and crispy. Remove them onto a paper towel to absorb excess oil.
Serve the pizzas hot, perhaps with a slice of lemon on the side to add a touch of freshness. These zucchini flower pizzas are a true delicacy that you can enjoy with friends and family, relishing the authentic taste of Neapolitan cuisine. Enjoy your meal!
