Spring rolls
Spring rolls are a delicious and unique appetizer, perfect for any occasion, whether it's a party, a family dinner, or a gathering with friends. They are not only aesthetically appealing but also full of flavors and textures, providing a memorable culinary experience. Their preparation is not complicated at all, and the ingredients can vary according to personal preferences.
To prepare spring rolls, you need rice paper, which will be the base of these delicious appetizers. These sheets are filled with a savory mix of vegetables, meat, or tofu, depending on your preferences. In a bowl, mix grated carrots, chopped cabbage, sliced green onions, and bean sprouts. If you want to add protein, you can include boiled chicken or shrimp, cut into small pieces.
To start, prepare a clean workspace and equip yourself with a bowl of warm water, where you will soak the rice sheets. Take a rice sheet and soak it in water for about 10-15 seconds until it becomes soft and flexible. Remove the sheet from the water and place it on a flat surface. In the middle of the sheet, add a portion of the vegetable and meat mixture, being careful not to overfill. Fold the edges of the sheet inward and roll it tightly, forming a compact package. Repeat this process until you have finished all the ingredients.
Spring rolls can be served raw, making them very healthy, or they can be fried to achieve a crispy crust. If you opt for frying, heat oil in a deep pan and, when it is hot enough, carefully add the spring rolls, frying them until they become golden and crispy. Remove them onto a paper towel to absorb excess oil.
To accompany the spring rolls, prepare a delicious sauce based on soy sauce, crushed garlic, and a little grated ginger. This will add extra flavor and perfectly complement the taste of the spring rolls. Arrange the spring rolls on a platter and serve them warm, alongside the prepared sauce. Don't forget to provide guests with utensils so they can enjoy them easily. These appetizers are not only tasty but also an excellent way to bring a splash of color and flavor to your table.
We wash, clean, chop/dice the vegetables and meat. We heat the wok, pour in the oil and let it heat for another minute, then add the diced meat. We add the chopped garlic, season with salt, garam masala, sambal oelek, stir well and taste. After 3-4 minutes at most, we take it out of the wok and keep it warm. The dried mushrooms are covered with water and microwaved for 2 minutes. They are kept like this with the juice until we need them. In the remaining oil in the wok, we add the onion, carrots, Mu-Err, and a moment's inspiration - green peas. We salt, season, and taste. Soy sauce (optional) can be added if desired. After 1-2 minutes, we add the bean sprouts. We mix again, taste, and season if necessary. The meat is added at the end, we mix, turn off the heat and let it cool. This filling is enough for 10 big spring rolls. We place the filling approximately in the middle. The side corners overlap diagonally, the side facing you joins the overlapping corners, and we roll it up. We heat the oil. To be sure that the oil is at the perfect temperature, we test it with a wooden spatula. We dip it into the hot oil; if it sizzles, the temperature is perfect. We fry the spring rolls. Be careful, they fry very quickly! The spring rolls are served hot with sauce.
Ingredients: 300 g chicken breast, 2 green onions, 2 carrots, 300-400 g bean sprouts, 10-15 g dried Mu-Err mushrooms, 2-3 garlic cloves, 10 sheets for wraps (approximately 23x23 cm), 1 teaspoon sambal oelek, garam masala to taste, salt to taste, peanut oil (or sunflower oil), 1 tablespoon soy sauce (homemade)
