Fresh spinach is a versatile and nutrient-rich vegetable, and preparing it in a delicious tart is an excellent choice for a healthy and flavorful meal. We start by washing the spinach thoroughly, making sure to remove any traces of dirt or impurities. It is recommended to rinse the leaves one by one to ensure they are clean. After washing, we put the spinach in a pot of boiling water with a little salt, letting it boil for a few minutes. This blanching process helps to soften the leaves, making them easier to incorporate into the mixture.
In a skillet, we melt the butter and add finely chopped onion. We sauté the onion over medium heat until it becomes translucent and releases its flavors. Once the onion is ready, we add the drained spinach, which we have chopped a little with a knife. We let the mixture cook over medium heat for about 8-10 minutes, stirring occasionally to ensure the spinach softens evenly.
After the mixture has cooked, we transfer the spinach and onion mixture to a large bowl. Here we add our favorite cheese, which can be cottage cheese or feta, and grated cheese for extra flavor. We incorporate beaten eggs, breadcrumbs, and season with salt, pepper, and a pinch of nutmeg, which will add an interesting aromatic note. We mix all the ingredients well, ensuring they are homogeneous.
To assemble the tart, we prepare a round baking dish with a diameter of 24 cm, which we line with puff pastry. We carefully roll out the dough, making sure it evenly covers the bottom and sides of the dish. We carefully pour the spinach and cheese mixture into the dish. Finally, we can decorate the surface with strips of dough, arranged in a sweet tart style, for a pleasant appearance.
We add a few thin slices of prosciutto on top, which will add a savory flavor and a pleasant contrast to the filling. We brush everything with a beaten egg to achieve a golden and appetizing crust. We preheat the oven to 180 degrees Celsius and, once ready, we place the tart in for about 40 minutes. Once the tart is baked, we let it cool slightly before cutting it. Enjoying this spinach and cheese tart alongside a fresh salad will turn any meal into a delicious feast!
