To prepare a delicious tart with nettle and mozzarella filling, we will start with the dough. The first step is to rub the yeast with the sugar, ensuring it dissolves completely so that the dough rises evenly. In a large bowl, we add the flour, salt, yogurt, and activated yeast. It is important to mix the ingredients by hand to ensure they are well incorporated. Once we have a homogeneous mixture, we begin to gradually pour in the mineral water while continuing to knead. The dough should become elastic and slightly sticky, and when we reach this consistency, we incorporate the oil, which will add suppleness and flavor.

After we finish kneading, we cover the bowl with a kitchen towel and let the dough rise for 25-30 minutes in a warm place, where it will rise beautifully. In the meantime, we can prepare the filling. We clean the green onion and slice it thinly, making sure to keep both the white and green parts for a more intense flavor. In another bowl, we beat the eggs well until they become frothy, then add the green onion, season with salt and pepper to taste, and add the frozen nettles, which we gently tear by hand to evenly incorporate them into the mixture.

We prepare a tart pan by lining it with parchment paper and sprinkling a little flour on the bottom to prevent sticking. When the dough has risen, we place it in the pan and carefully spread it with our hands until it reaches almost the edges of the pan. It is important to prick it with a fork to prevent puffing during baking. We pour the nettle filling evenly over the dough and, to add a creamy and savory note, we slice the mozzarella and carefully place it on top.

We place the tart in the preheated oven at a suitable temperature, letting it bake until it becomes golden and browned on top, at which point the aroma will fill the entire kitchen. Once the tart is ready, we take it out of the oven and let it cool slightly before cutting and serving.
