Liver and kabanos pastries: a surprising delicacy

Ingredients:
- 500 g chicken liver
- 1 large onion
- 1 carrot (optional, but recommended)
- ½ bell pepper (preferably red or yellow for color)
- 3 kabanos sausages
- 1 package of puff pastry (I recommend Linco brand for an excellent result)
- 100 g cheese (optional)
- 2-3 tablespoons of oil (for sautéing the onion)
- Salt and pepper to taste

Step 1: Preparing the liver
Start by washing and cleaning the chicken liver. Boil it in salted water for about 30 minutes. The liver must be well cooked to obtain a fine paste. While the liver is boiling, you can prepare the vegetables.

Step 2: Sautéing the onion
In a pan, heat a few tablespoons of oil and add the chopped onion. Sauté the onion over medium heat until golden. If you have a boiled carrot from soup, you can chop it finely and add it to the pan, along with the diced bell pepper. These vegetables will add extra flavor and color to your dish.

Step 3: Making the liver paste
After the liver has boiled, let it cool slightly, then chop it finely using a food processor or meat grinder. Add the onion and vegetable mixture, then season the paste with salt and pepper to taste. You can also use other favorite spices, such as paprika or herbs, for extra flavor.

Step 4: Forming the pastries
Roll out the puff pastry on a lightly floured surface and cut out flower shapes using a cookie cutter or knife. Make sure to cut out two sizes: one large (for the base of the flower) and one small (for the center). Place a teaspoon of the liver paste in the center of each large flower.

Step 5: Adding the kabanos
Cut the kabanos into pieces about 2 cm long and score the tip of each piece. This trick allows the kabanos to open like a flower during baking, giving the dish an attractive appearance. Place a piece of kabanos on top of the liver paste in each flower.

Step 6: Baking
Place the pastries on a baking sheet lined with parchment paper and bake in a preheated oven at 180 degrees Celsius for 20-25 minutes, or until golden and slightly crispy. You will notice how the puff pastry puffs beautifully and takes on a wonderful texture.

Step 7: Creative variations
If you want to surprise even more, you can create a vegetarian version of the recipe. Replace the liver with a mixture of cottage cheese, dill, and chopped olives. You can also add some pieces of cheese in the center of the pastries to enhance the flavors.
