There has been talk about how to make cottage cheese, but since the weather is bad today, I will tell you a story with pictures about this traditional recipe. It is a very simple and well-known method that can bring a touch of joy to gloomy days. We start with the necessary ingredients to obtain fresh and delicious cottage cheese.

The first step is to gather the ingredients. We need 4 liters of fresh cow's milk, preferably unpasteurized, as it has a richer taste and creamier texture. We will also use half a cup of vinegar or lemon juice to help curdle the milk. Don't forget a pinch of salt, which will enhance the flavor of our cheese.

Once we have gathered everything we need, we will start the process. We pour the milk into a large pot and put it to boil over medium heat. It is important to stir constantly to prevent the milk from burning. After the milk starts to boil, we reduce the heat and add the vinegar or lemon juice. We stir gently and watch as the milk curdles quickly, forming the cheese and whey.

After about 10 minutes, we will see that the cheese has separated from the whey. We take a large strainer and cover it with a clean cheesecloth or thin cloth. We pour the mixture of cheese and whey into the strainer, allowing the whey to drain. It is essential to let the cheese drain for 30 minutes, but if you prefer drier cheese, you can leave it even longer.

After draining the whey, we can add the salt, mixing well to incorporate it evenly. Now, the cottage cheese is ready to be used! We can enjoy it plain, on a slice of fresh bread, or use it in various dishes. It is perfect for adding to pies, cakes, or even salads.

 Ingredients: 1 liter of milk (obviously, real milk, I do not recommend skim milk), 100 ml of vinegar or the juice of 2 lemons (I use grain vinegar, which has no strong smell, and the cheese will be washed during the process and will not retain the taste/smell of vinegar), a sieve, a bowl, and a clean cheesecloth.
