Cabbage Snails
To prepare a delicious recipe of cabbage rolls, we need a careful approach that highlights the flavors and textures of the ingredients. We start by peeling a large onion, which we chop finely. We put it in a pan with a splash of oil and sauté it over medium heat, stirring occasionally, until it becomes glassy and slightly golden. This will add a sweet and aromatic base to our dish.
After the onion is sautéed, we add finely chopped fresh cabbage. It is important that the cabbage is well-drained of water to avoid excess liquid in the pan. We mix the cabbage well with the onion, adding our favorite spices. It is essential to add salt, pepper, and for a touch of color, paprika. The paprika will give an attractive appearance to the dish, while the pepper will ensure that the filling has an intense and slightly spicy taste. We let the cabbage sauté on low heat, stirring occasionally to prevent sticking, until it becomes slightly soft, but not completely, as we want to maintain a pleasant texture. Once the cabbage is ready, we transfer it to a bowl to cool.
Meanwhile, we prepare to make strudels with pastry sheets. We take two sheets of pastry and lightly brush them with a little oil to make them more elastic. Then, we add two more sheets on top and lightly drizzle them with sour cream, which will provide delicious creaminess. Now, we cut the sheets lengthwise, obtaining strips about 10 cm wide. We place a portion of sautéed cabbage in the middle of each strip and carefully roll them, forming a strudel with a diameter of about 2 cm. It is important to roll tightly to achieve a well-defined roll.
We continue in the same way with the remaining sheets and filling, making sure that each roll is uniform and well-sealed. Once we are done, we place the rolls in a lined baking tray, leaving a little space between them to allow for expansion during baking. We lightly brush the surface of the rolls with sour cream, so they brown nicely in the oven while preventing the sheets from cracking.
Finally, we place them in a preheated oven at medium heat and bake for about 30 minutes, or until they become golden and crispy. These delicacies can be served warm, as an appetizer or main course, and their intense taste of cabbage and spices will delight any foodie. If you want a vegan version, feel free to use only oil for greasing, thus keeping the recipe both tasty and compliant with dietary requirements. Bon appétit!
