To prepare a delicious recipe for mashed potatoes with ham foam and green beans, we will start by gathering the necessary ingredients and utensils. First, we peel and wash the potatoes thoroughly, then we place them in a pot with water and salt to boil. It is important that the water is sufficient to completely cover the potatoes. They are boiled until soft, and this process takes about 20 minutes, depending on the size of the potato pieces.

Meanwhile, we take care of the ham. We cut it into small cubes, making sure they are uniform so that they integrate well into the mixture. Then, in a bowl, we mash the ham cubes with sour cream, adding salt and pepper to taste. It is essential to achieve a fine and creamy texture to ensure a delicious foam.

Elsewhere, we prepare the green beans. We boil them in salted water, being careful not to leave them on the heat too long so they do not lose their color and crunchy texture. Once ready, we drain them and rinse them under cold water to stop the cooking process. Then, we cut them into smaller pieces and add them to a hot pan with olive oil, letting them sauté lightly. Finally, we add the crushed garlic, mixing well to combine the flavors.

After the potatoes are cooked, we drain them and mash them using a potato masher. We add a bit of butter to achieve a creamy and smooth puree, which we will use as the base for our dish. At this point, we prepare to assemble the dish. We take four metal molds or, if we don’t have them, we can improvise with plastic molds without bottoms. On a platter, we place the molds and start filling each one.

The first layer is the mashed potatoes, followed by a generous layer of ham foam, and finally, we add the sautéed green beans with garlic. Each layer must be evenly distributed so that the dish looks good in the end. Once we finish filling the molds, we refrigerate them for at least an hour to firm up and combine the flavors.

After this time, we carefully remove the molds, being careful not to break the layers. We decorate each portion with black olive paste, which will add a color contrast and an intense flavor to our dish. This recipe is not only tasty but also colorful, perfect for a festive meal or a special dinner. Enjoy it with pleasure!
