Appetizers - Bean and Zucchini Pâté by Natasa D. - Recipia
To prepare a delicious zucchini and bean paste, we start by choosing the freshest zucchinis. They should be firm and have a uniform color. Wash them well, then cut them into cubes or slices, depending on your preference. In a deep skillet, add two tablespoons of high-quality olive oil, which will bring a special flavor to the dish. When the oil heats up, add the chopped zucchini along with a few crushed garlic cloves. The garlic will provide an irresistible aroma, but if you are not a big fan of its intense flavor, you can remove it at the end.

Sprinkle a little salt over the zucchinis, cover the skillet with a lid, and reduce the heat to low. It is important for the zucchinis to steam well, release their juices, and become soft, so they turn into a fine paste. Stir occasionally to prevent sticking, and when the zucchini becomes soft and a fork easily pierces it, it's time to take it off the heat.

After removing the garlic, transfer the zucchini, along with the oil from the skillet, to a bowl or the blender container where you already have the beans. The beans, whether canned or boiled, will add a creamy texture and considerable nutritional value. Blending will turn the ingredients into a smooth paste, but if you prefer a chunkier texture, feel free to blend only until you reach the desired consistency.

Check the taste of the dish, and if necessary, add a little more salt or oil to enhance the flavor. This paste is extremely versatile and can be enjoyed both warm and cold. An interesting idea would be to try grilled zucchini, adding raw oil at the moment of blending for an even more intense flavor.

If you want to experiment, you can add various spices or herbs, but the basic recipe remains wonderful and simple, with a unique taste. This zucchini and bean paste is perfect as an appetizer on a slice of toasted bread, as a side dish to a main course, or even as a filling for various dishes. Enjoy every spoonful!
