Delicious Baked Potatoes with Dried Thyme Recipe

Ingredients:
- 6 white potatoes (choose varieties suitable for baking, like gratin potatoes)
- 2 tablespoons of extra virgin olive oil
- Salt and freshly ground pepper, to taste
- 1-2 tablespoons of dried thyme, crushed
- For the sauce:
- 3-4 garlic cloves
- 1 tablespoon of water
- 1 teaspoon of olive oil
- Salt, to taste
- Fresh dill, chopped

Instructions:

1. Start by preheating the oven to 210 degrees Celsius. This is the ideal temperature to achieve crispy potatoes on the outside and slightly soft on the inside.

2. Wash the potatoes well under cold running water to remove impurities. Use a vegetable brush if necessary, and then dry them with a clean towel. It's important not to peel them, as the skin not only provides an appealing look but also a more intense flavor.

3. Cut the potatoes into large slices, about 2 cm thick. This will allow for even baking without crumbling.

4. In a large bowl, add the potato slices and drizzle them with the 2 tablespoons of olive oil. Sprinkle with salt, freshly ground pepper, and dried thyme. Mix well with your hands or a spatula, ensuring all slices are evenly coated with the seasonings.

5. Arrange the potatoes in a heat-resistant dish in a single layer to allow for even baking. Do not overcrowd them, as this can lead to uneven cooking.

6. Bake the potatoes in the preheated oven for 25-30 minutes. Check them occasionally; they are done when golden and crispy on the outside. Use a fork to test if they are cooked inside.

7. While the potatoes are baking, you can prepare the garlic sauce. Crush the garlic cloves with a knife or using a garlic press. In a small bowl, mix the crushed garlic with a tablespoon of water, a teaspoon of olive oil, and salt, then add the chopped fresh dill.
