Asparagus omelette appetizer with cheese

Asparagus omelette appetizer is a baked omelette with eggs, kashkaval, a yellow cheese, and cottage cheese. The asparagus has to be boiled until all the water in the pan is gone, otherwise the omelette comes out watery at the bottom. I cut it into small squares, especially when I take it on a picnic. Prep time: 15 minutes. Cooking time: 23 minutes. Total time: 38 minutes. Servings: 6. About 212 kcal and 15 g protein per serving.
Ingredients
- 6 eggs
- 150 g kashkaval cheese
- 2 tbsp cottage cheese
- 125 ml milk
- 3/4 tsp fine salt
- 1/2 tsp ground pepper
- 7 asparagus spears
- 250 ml water
- 1 tsp olive oil
- 1 tbsp olive oil
Preparation
1. Trim the woody part off the asparagus, cut it into pieces or leave it whole, and put it in a pan with 250 ml water, 1 tsp olive oil and 1/4 tsp fine salt. 2. Put the pan on the heat and boil the asparagus for about 8 minutes, until the water is gone. 3. In a bowl, beat the eggs with 150 g grated kashkaval, 2 tbsp cottage cheese, 125 ml milk, 1/2 tsp fine salt and 1/2 tsp ground pepper. 4. Add the asparagus to the bowl and mix well. 5. Grease a cake tin with 1 tbsp olive oil, pour in the mixture and bake at 180°C for about 15 minutes, until it browns a little on top.
Notes
The omelette keeps covered in the fridge for up to 3 days and is eaten cold or at room temperature. If you can't find kashkaval, the same weight of telemea, a salty brined cheese, works well, but it is saltier, so use less salt. Contains eggs and dairy. Goes well with cherry tomatoes and green salad, especially for a picnic. Choose straight, firm spears with tight tips, because soft asparagus turns watery when boiled. If the asparagus is thick, cut it into smaller pieces, otherwise it stays tough in the omelette, especially in the middle.
Frequently asked questions
What if I use white asparagus?
White asparagus is peeled with a vegetable peeler, up to near the tip, and boiled for about 10 minutes, until it softens.
Can I use ricotta instead of cottage cheese?
Yes, the same amount, that is 2 tbsp. It comes out a little finer and softer.
Why is the omelette still liquid in the middle?
This usually happens when the asparagus has not boiled until all the water in the pan is gone. If it does, leave it in the oven for 5 more minutes and check that it has browned on top.
