The egg roll with cheese and cheese is a savory appetizer, perfect for serving on special occasions or at a festive meal. The preparation process is simple, but the final result is spectacular, both in appearance and taste. Start by carefully separating the eggs, making sure that the yolks do not come into contact with the whites. Whisk the yolks with a pinch of salt, using a whisk or mixer, until the mixture becomes creamy and light in color. This will add a fine texture to your roll.

Separately, beat the egg whites with a mixer until you get a stiff foam that forms peaks when you lift the whisk. This foam will give the roll an airy and fluffy consistency, essential for achieving a perfect result. When the foam is ready, carefully combine the egg whites with the yolks using a spatula, to maintain the air in the whites. Then, add 50 g of finely grated cheese to the egg mixture, which will add a delicious flavor. Season with salt and pepper to taste, being careful not to overdo it with the salt, as the cheese used will also contribute to the flavor.

Prepare a baking tray lined with parchment paper, then pour the egg mixture into the tray, ensuring it is evenly distributed. Place the tray in the preheated oven at a medium temperature and let the roll bake until it becomes golden and firm to the touch. When ready, remove the roll from the oven and, while it is still warm, roll it up with the help of a damp cloth, being careful not to break it. Let it cool in this form, so it retains its structure.

Meanwhile, you can prepare the filling. Mix the cheese well with the grated cheese, adding paprika and seasoning again with salt and pepper. This will create a creamy and flavorful filling that will perfectly complement the roll. Once the roll has completely cooled, carefully unroll it and evenly spread the cheese mixture over the entire surface. Then, roll it up again, gently tightening to form a uniform cylinder.

Wrap the roll in plastic wrap and keep it cool for a few hours, or even overnight, to allow the flavors to blend. When you are ready to serve the appetizer, cut the roll into thin slices, being careful to create nicely presented portions.
