Zucchini boats

Appetizers - Zucchini boats by Madalina N. - Recipia

Wide zucchini are easy to scoop out; zucchini boats are filled with rice and mushrooms and baked covered for 40 minutes. The stuffed zucchini with rice and mushrooms has a filling bound with grated cheese, egg white and breadcrumbs, then it browns uncovered. I choose firm zucchini; in my version I used coconut oil, and one large one turned out more like a ship than a little boat. Prep: 20 minutes. Cook: 75-80 minutes. Rest: 0 minutes. Total: 95-100 minutes. Servings: 3. About 455 kcal and 16 g protein per serving.

Ingredients

  • 3 medium zucchini (900 g)
  • 90 g rice
  • 1 medium onion (150 g)
  • 4 garlic cloves (12 g)
  • 230 g canned mushrooms
  • drained
  • 60 ml olive oil
  • 360 ml water
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 16 g breadcrumbs
  • 55 g grated cheese
  • 1 egg white
  • 15 g parsley
  • 1 lemon (juice
  • optional)

Preparation

1. Preheat the oven to 180°C. Cut the zucchini in half lengthwise and carefully scoop them out to make boats. Finely chop the flesh and set it aside. 2. Drain the canned mushrooms. Put the rice, chopped onion and garlic, mushrooms, oil, salt, pepper and 360 ml water in a saucepan. Simmer for 20-25 minutes, stirring from time to time, until the rice is nearly tender and the liquid has been absorbed. 3. Add the chopped zucchini flesh and cook for another 5 minutes. Turn off the heat. 4. Stir in the grated cheese, chopped parsley, egg white and breadcrumbs. If using lemon, add the juice now. Mix well, then fill the boats. 5. Arrange them in a baking dish and cover it with aluminum foil. Bake for 40 minutes, until the zucchini are tender. 6. Remove the foil and bake for another 10 minutes, until the filling is browned. If any filling is left, put it in the dish beside the zucchini and take it out after 20 minutes, once the top has set.

Notes

You can serve them warm or cold, with a simple green salad. The juice of one lemon is optional and should be added after you take the filling off the heat. If you need the meal ready at a set time, start preparing about an hour and 40 minutes beforehand; the simmering time may vary by a few minutes. Choose firm zucchini of a similar size so they cook at the same rate. Very large ones may have a watery, seedy center; remove the soft part and keep the firm flesh. The boats can be kept in a sealed container in the refrigerator for up to 3 days. You can use the same amount of coconut oil instead of olive oil.

Frequently asked questions

Can I use regular courgettes instead of zucchini?

Yes. Choose three courgettes about 18-20 cm long so they can hold the filling.

Will brown rice work?

Yes, but cook it separately for about 35-40 minutes, until tender, then mix it into the filling.

What can I use instead of egg white?

Mix 1 tablespoon ground flaxseed with 3 tablespoons water and leave for 10 minutes, then stir the gel into the filling.

Can I use Parmesan instead of grated cheese?

Yes. Use 40 g grated Parmesan instead of the 55 g grated cheese.
