Blackberry clafoutis

Blackberry clafoutis is served cold, with the fruit baked in a soft batter made with milk and eggs. In the oven, the batter sets around the fruit and develops a lightly browned edge; once cooled, the middle stays tender, like a pudding. I choose firm blackberries so they don’t get crushed when I pour in the batter. Prep: 15 minutes. Cook: 25-35 minutes. Rest: 60 minutes. Total time: 100-110 minutes. Servings: 4. Approximately 330 kcal and 11 g protein per serving.
Ingredients
- 250 g blackberries
- 1 teaspoon oil
- 3 eggs
- 75 g sugar
- 1 packet vanilla sugar (8 g)
- 130 g flour
- 200 ml milk
- 1 teaspoon lemon essence
- 1 teaspoon vanilla essence
- 10 g powdered sugar
Preparation
1. Heat the oven to 180°C. Grease a round pan of about 20 cm with 1 teaspoon of oil and arrange the whole blackberries in it; if they’re very large, cut them in half. 2. Beat the eggs with the sugar and vanilla sugar. Gradually mix in the flour and milk, then add the lemon essence and vanilla essence. 3. Pour the batter over the blackberries and bake for 20-25 minutes, until the edges are set. Remove the pan, sprinkle with the powdered sugar and bake for another 5-10 minutes, until lightly browned; check the middle with a toothpick. 4. Leave the clafoutis to cool for 60 minutes and serve cold.
Notes
Choose firm blackberries with no crushed berries, as very ripe fruit can release a lot of juice and leave the middle wet. A round pan of about 20 cm keeps the layer at the right thickness; in a much wider one, it will bake faster. Don’t rush the cooling, the center will continue to set as it sits on the counter. Store covered in the fridge for up to 3 days. Serve it with plain yogurt; for a gluten-free version, replace the flour with 130 g of gluten-free mix, bearing in mind that the eggs and milk are still included.
