Polish chicken soup is a traditional dish, perfect for cool days or when you need a comforting meal. With simple ingredients and an easy cooking technique, this recipe will bring a touch of warmth to your soul.

Ingredients:
- 1 chicken back (approximately 1 kg)
- 3 eggs (to add a rich consistency)
- 3 tablespoons of flour (to thicken the soup)
- 1 onion (for a base flavor)
- 1 bell pepper (for added sweetness)
- 1 celery (for distinct aroma)
- 1 parsnip (adds a sweet and slightly spicy flavor)
- 1 parsley root (for a fresh taste)
- 1 tomato (optional, for a pleasant acidity)
- 1 zucchini (for a crunchy texture)
- A bunch of parsley leaves (for garnish and flavor)

Instructions:

1. Preparing the chicken: Start by placing the chicken back in a large pot with cold water. Add a teaspoon of salt and set the pot over medium heat. Let the meat boil for about 30-40 minutes, until well cooked. You can also add some spices like peppercorns or bay leaves to enhance the flavor.

2. Chopping the vegetables: Meanwhile, peel and finely chop the onion, bell pepper, celery, parsnip, and parsley root. Use a sharp knife to ensure that the vegetables are evenly cut, so they will cook evenly.

3. Sautéing the vegetables: In a large skillet, add 2 tablespoons of oil and heat over medium heat. Add the chopped vegetables and sauté for 5-7 minutes, stirring frequently, until they become tender and slightly golden.

4. Cooking the soup: Once the chicken is cooked, remove it from the pot and let it cool slightly. In the same water in which you boiled the chicken, add the sautéed vegetables and let them boil together for 15-20 minutes. At this stage, you can also add the diced tomato for extra acidity and color.

5. Preparing the eggs and flour: In a bowl, beat the 3 eggs and gradually add the flour, continuously mixing until you get a smooth batter. This mixture will be added to the soup to give it a creamy texture.

6. Adding the chicken: Meanwhile, cut the chicken into small pieces and add it to the soup. After the vegetables have boiled, gradually pour in the egg and flour mixture, stirring continuously to avoid lumps. Let the soup boil for another 5-10 minutes, until it thickens.

7. Finishing and serving: Finally, add the diced zucchini and let the soup boil for a few more minutes. Taste and adjust the salt and pepper to your liking. Serve the soup hot, garnished with fresh parsley leaves for added flavor.

Practical tips:
- You can vary the vegetables according to the season. Add carrots or potatoes to make the soup even heartier.
- If you want a spicier soup, add a dash of hot pepper or spices like paprika.
- This Polish chicken soup is delicious the next day, when the flavors have had time to meld.

Enjoy this comforting soup, perfect for any occasion. It is a true example of comfort food that will warm your heart and bring smiles to the faces of your loved ones.
