We start by washing the cauliflower well, carefully selecting the florets. Then, we put a large pot of water to boil, adding a pinch of salt to enhance the flavor of the vegetables. When the water reaches boiling point, we add the cauliflower and let it boil for about 10-15 minutes, until it becomes tender but not overly soft. After the cauliflower is cooked, we remove it using a slotted spoon and place it on a plate, making sure to keep a few florets for the final decoration of the soup. The water in which we boiled the cauliflower will become the flavorful base of our soup.

In the same water, we can also add a few florets of broccoli to give it a more complex taste. It is important to boil them for just a few minutes, so they don't become too soft, as we do not want to add them to the soup, but just use them for added flavor.

Meanwhile, we take care of the mushrooms and onion. We clean the mushrooms and chop them finely, and we finely chop the onion. In a pan, we heat a few tablespoons of oil, where we first add the onion. It will turn golden and release a tempting aroma. Then, we add the chopped mushrooms, stirring constantly to brown them evenly. This mixture will add a special flavor to the soup. After the mushrooms are well browned, we pour them into the pot with water and cauliflower, letting everything boil together for 10-15 minutes.

At this point, it is time to focus on seasoning the soup. We add salt to taste, but also a fragrant mix of herbs, such as parsley, dill, lovage, and finely chopped sorrel. These aromatic plants will give the soup an unmistakable freshness and vibrant color. After mixing well, we make sure that the soup has a balanced taste, adjusting the spices if necessary.

To finish the dish, we decorate the soup with the small florets of cauliflower we saved at the beginning. This will not only add a nice appearance but will also intensify the flavor. The soup is now ready to be served. We can accompany it with crunchy croutons or a slice of fresh bread, so that each serving is a true feast for the senses.
