Savory - Spelt Pudding with Zucchini by Clementina D. - Recipia
To prepare a zucchini-based delight, we start by choosing fresh, meaty zucchinis. They can be grated or sliced thinly, depending on preference. Once we have prepared the zucchini, we focus on a spacious frying pan. We add a little olive oil or sunflower oil, to taste, and heat it over medium heat. Then, we add finely chopped onion, which will bring an extra flavor to our dish. The onion is sautéed for 2-3 minutes until it becomes translucent and starts to release its aromas.

After this time, we add the previously prepared zucchini to the pan and mix well. We let the mixture steam slightly for about 5 minutes, stirring occasionally, so that the zucchini softens but does not turn into puree. It is important to maintain its texture to give the dish an appealing look and an interesting consistency.

Once the zucchini is ready, we take the pan off the heat and add melted cheese, whether sliced or grated. This will add a special creaminess to the mixture. We mix well until the cheese completely melts and integrates into the composition. Then, we add a beaten egg, which will bind the ingredients, and Parmesan or Grana cheese, according to preference. Finally, we don't forget fresh herbs, such as parsley or dill, which will bring a touch of freshness.

The obtained composition is poured into a unique mold or into several small molds that we have previously greased with butter and lined with breadcrumbs or flour to prevent sticking. We preheat the oven to 180 degrees Celsius and place the mold in the oven. We bake for 25-30 minutes until a golden and appetizing crust forms on top. Finally, we take the dish out of the oven and let it cool slightly before cutting it.

Served warm or at room temperature, this zucchini dish will surely be a delight on your table, perfect as an appetizer or as a side dish. Enjoy your meal!
