To prepare a delicious recipe of potatoes with roasted peppers and corn, the first step is to cook the potatoes. Cut the potatoes into equal-sized cubes so that they cook evenly. Place them in a pot with cold water, add a tablespoon of salt, and bring the water to a boil. Once the water starts boiling, reduce the heat and let the potatoes simmer for about 10-15 minutes until they become soft but not too soft, so they retain their shape. When ready, drain them and set aside to cool.

In parallel, prepare the peppers. Preheat the oven to 180 degrees Celsius. Place the peppers on a baking tray and roast them for about 45 minutes, turning them every 10-15 minutes so that they brown evenly on all sides. Alternatively, you can roast them on a stovetop or grill to achieve a more intense taste and aroma. After the peppers are ready, remove them from the oven and place them in a bowl, sprinkling a little salt over them. Cover the bowl with a lid or plastic wrap for 10-15 minutes; this process will allow the peppers to sweat and the skin to come off more easily.

Once cooled, peel the peppers, remove the stem and seeds, and then cut them into thin strips. Squeeze the juice left by the peppers into a bowl for later use in the recipe. In a pan, heat a little oil and add the sliced onion or rings, along with the hot pepper if you want a bit of spice. Sauté these ingredients for about 5 minutes until the onion becomes translucent and slightly soft.

Add the roasted pepper strips to the pan, along with the collected juice, and continue to cook for another 3 minutes until the juice starts to caramelize slightly. Season with salt and pepper to taste. Then, add the drained corn kernels and the boiled potato cubes, carefully mixing to combine all the ingredients. Leave on the heat for just a few minutes, enough to warm all the components, then set the dish aside.

To finish the dish, add the sour cream and mix well until it melts into the warm ingredients, forming a creamy and delicious sauce. Adjust the taste with salt, pepper, and chili flakes if you want a bit of heat. This dish can be served immediately while warm, but it is just as tasty cold, making it perfect for a family meal or a picnic. Enjoy this savory mix of flavors and textures!
