Ramsons, an often underestimated ingredient, takes on a unique flavor when prepared correctly. We start by cleaning, washing, and draining the ramsons. This first step is essential as it ensures that the bulbs are free from impurities and ready to reveal their flavor. The next step involves heating a small amount of olive oil in a deep pan. We add the ramsons along with salt, being careful to stir constantly. This 'quick sautéing' technique allows us to maintain the crunchy texture of the ramsons while flavoring them.

After a few minutes of cooking, we cover the pot with a lid and reduce the flame to the minimum. This steaming stage is crucial; we let the ramsons soften, becoming tender and juicy.
