To prepare a delicious and aromatic pepper sauce, we start by gathering the necessary ingredients. You will need 100 g of peppers, which you will trim the ends to prepare them for the blender. This first step is essential, as the peppers will be the base of your sauce. We continue with the rest of the peppers, which we carefully clean, removing both the seeds and the useless parts, to ensure that the sauce will be smooth and full of flavor. These will then be added to the blender over the prepared ones, giving them a note of freshness and intensity.

Add the garlic, an ingredient that will give the sauce an unmistakable aroma, and 250 ml of vinegar, which will balance the sweetness of the peppers. Use the blender to mix everything until you obtain a fine paste with a homogeneous texture. Make sure the peppers are chopped very finely so that the sauce integrates perfectly into your dishes.

After you have obtained the pepper paste, take a pot and transfer the mixture obtained. Add the remaining vinegar and sugar, making sure to combine them well. Place the pot over medium heat and stir constantly for 5 minutes or until the sugar is completely dissolved. This is a crucial step, as the sugar will help balance the acidity of the vinegar and will add a note of sweetness to the sauce.

After the mixture has boiled for 5 minutes, bring the sauce to a boil and let it simmer for 35-40 minutes, stirring occasionally to prevent sticking to the bottom of the pot. You will notice how the sauce starts to thicken and intensify its aroma. This boiling time is essential to allow the ingredients to combine harmoniously and to develop a rich flavor.

When the sauce is ready, let it cool slightly. Make sure it is not too hot to avoid wasting the bottles. Pour the sauce into glass bottles, avoiding plastic, to preserve the aroma and quality of the sauce. I ended up with two bottles, each of 1.2 liters, which I keep in the fridge. This is a perfect recipe for preserving peppers and adding a special note to your dishes. The sauce can also be poured into sterile bottles and sealed, just like any other type of pickle or compote, giving you a delicacy that you can enjoy throughout the year.
