Potato Platies
To prepare a delicious and healthy dish, we start by chopping the onion finely, as thin as possible. It is essential to use a sharp knife to achieve uniform slices. After cutting the onion, we rub it with a little salt, this process helps to soften it and release its flavors. If you prefer an onion with a milder taste, you have the option to blanch it for a few minutes and then drain it well. Another option is to use frozen or thawed onion, which becomes sweeter; even the red onion I used has a milder taste compared to other types.
Next, we peel and cut the potatoes and carrots into suitable cubes. The garlic should be crushed to intensify its aroma. Once we have prepared all the ingredients, we mix them well in a large bowl, ensuring that all the flavors combine perfectly. It is time to add the remaining ingredients: your favorite spices, olive oil, and diced tomatoes. The resulting mixture should be homogeneous, so we make sure that each ingredient is well distributed.
After obtaining a uniform composition, we transfer everything into a glass baking dish. It is important that the liquid, either broth or water, completely covers the potatoes in the dish to ensure they cook evenly and do not dry out. We cover the dish with aluminum foil or, if you prefer, you can use a suitable lid.
Now, we preheat the oven to a medium-high temperature of about 200 °C. We place the dish in the oven and let the dish bake for 40-50 minutes, depending on the specifics of our oven. It is important to check from time to time, and when the potatoes turn golden and a fork easily pierces them, we can say that the dish is ready.
After taking the dish out of the oven, we let it cool slightly before serving. This dish can be accompanied by a fresh salad or a slice of crispy bread to complete the meal. Enjoy every bite and savor the perfectly combined flavors!
