To prepare this delicious dish, we start by choosing a denser cabbage head, which will allow us to grate it on a large grater. This will provide a pleasant texture to the final dish. Once we have grated the cabbage into a bowl, we add a pinch of salt, then mix well to ensure the salt is evenly distributed. We let the cabbage sit for about 5 minutes, during which it will begin to release its juice. After this interval, it is important to squeeze it well to remove the excess liquid.

In another pot, we heat 150 ml of oil. Once the oil is hot, we add the squeezed cabbage and let it sauté. It is essential to add salt to taste and ground pepper to enhance the flavors. The cabbage is sautéed until it becomes soft and slightly caramelized, stirring constantly to avoid sticking to the bottom of the pot. This stage is crucial, as sautéing the cabbage will bring a deep and savory taste to the dish.
