Cauliflower is a versatile and delicious ingredient, and the recipe we propose today adds a touch of flavor and vitality to every meal. We start by preparing the cauliflower, which is carefully broken into small florets so that it cooks evenly and absorbs the delicious flavors of the ingredients. After breaking it apart, we wash the cauliflower florets under a stream of cold water, ensuring that we remove any impurities. Then, we let them soak for an hour in cold water to rejuvenate.

While the cauliflower is preparing, we take care of the carrot and horseradish. The carrot is peeled, washed well, and sliced into thin rounds to add a note of sweetness and a crunchy texture to our dish. The horseradish, known for its intense aroma, is peeled and cut into thin sticks, which will bring a spicy and refreshing note.

After we finish cutting the vegetables, we take care of filling the jars. We used a 3-liter jar and two 1.5-liter jars, but you can adjust the quantities according to your needs. We place the cauliflower in the jars, alternating with carrot rounds and horseradish sticks, so that each jar is full of color and flavor.

In a large pot, we bring water and vinegar to a boil. It is important to use the right amount of water so that it completely covers the vegetables in the jars. Once the water starts to boil, we add salt and sugar, which will help preserve the vegetables and enhance the flavor. The bay leaves and pepper add a special aroma. We mix the ingredients and let it boil for a few minutes for the flavors to combine.

After obtaining a flavorful marinade, we carefully pour it hot over the vegetables in the jars using a ladle. We ensure that each cauliflower floret, each carrot slice, and each horseradish stick are well covered with this aromatic liquid. We also add bay leaves and pepper to each jar for an even more intense flavor.

After we finish filling the jars, we seal them with airtight lids and let them cool at room temperature. Once they have cooled, we store the jars in the pantry or cellar, where they will preserve perfectly. This recipe is wonderful to be enjoyed as a side dish with various dishes or as a healthy snack on hot summer days. Pickled cauliflower will surely become a family favorite, bringing a touch of freshness and flavor to every meal.

 Ingredients: 4 kg cauliflower, 2 roots of horseradish, 2-3 carrots, 2 l water, 1 l vinegar, 1 cup of sugar (250 ml cup), 3 heaping tablespoons of pickling salt, 1 tablespoon of peppercorns, 6-7 bay leaves.
