Green Walnut Jam
Nuts are a wonderful ingredient, full of nutrients, that can transform any dish into a special delicacy. We start by peeling the nuts from the green shell, being careful not to leave any remnants. After obtaining the white nuts, we wash them well under a stream of cold water to remove impurities. This first step is essential, as thorough cleaning will ensure a more pleasant taste and a fine texture of the jam.
In a large pot, we put water and sugar, mixing them well. We bring the mixture to a boil, making sure to stir occasionally to ensure that the sugar dissolves completely. When we notice that the sugar has melted and the syrup has started to boil, we add the previously prepared nuts. We let the nuts boil in the sweet syrup for about 30-40 minutes, stirring occasionally to prevent sticking to the bottom of the pot. It is important for the nuts to absorb the syrup's flavor well, and this process will contribute to achieving an ideal texture for our jam.
As the nuts boil, we can prepare the lemon. We squeeze the juice from a fresh lemon, being careful to remove any seeds. After the nuts have boiled sufficiently and the syrup has started to thicken, we add the lemon juice, which will give a slightly tangy taste to the jam and help preserve it. We mix well to ensure that the juice is evenly distributed.
Once we have achieved the desired consistency, we prepare to transfer the jam into sterilized jars. It is essential to use clean and dry jars to prevent contamination of the jam. With the help of a spoon, we fill each jar with jam, being careful to leave a little space at the top. After filling all the jars, we close them tightly with the lids and turn them upside down to create a vacuum. We let the jam cool completely, then we can store it in a cool, dark place. This delicacy will be perfect on a slice of toasted bread or as a filling for cakes, bringing a touch of flavor and good cheer every day.
