Taste (Dumpling)
To prepare a delicious recipe for filled noodles with plum jam, start by making the dough. In a large bowl, add 500 grams of high-quality flour, 3 large eggs, and a pinch of salt. Mix the ingredients with a fork until a dough starts to form. If necessary, you can gradually add a tablespoon of cold water until the dough becomes elastic, but not too soft. Once you achieve the right consistency, knead the dough for about 10 minutes until it becomes smooth and homogeneous. Cover the dough with a clean towel and let it rest for 30 minutes.
After the dough has rested, divide it into four equal parts. Using a rolling pin, roll out the first piece of dough on a well-floured surface until you obtain a thin sheet. If you prefer, you can use a pasta machine; set it to position 6 and run the dough through it to get an even sheet. Repeat this process for the other pieces of dough.
After you have rolled out all the sheets of dough, cut them into squares of about 5x5 cm. In the center of each square, place a teaspoon of plum jam. Fold the square in half to form a crescent shape, then press the edges with a fork to ensure a good seal. This step is essential to prevent the filling from leaking during boiling.
In a large pot, add salted water and bring it to a boil. When the water is boiling, carefully add the filled noodles and let them cook for about 15 minutes or until they rise to the surface, indicating they are ready. Once cooked, remove them with a slotted spoon and drain well.
In a frying pan, heat a little oil over medium heat, then add the breadcrumbs and lightly fry until golden. After the breadcrumbs are fried, add the drained noodles to the pan, carefully mixing to coat them evenly with breadcrumbs. Don't forget to add a pinch of salt to enhance the flavor. Serve them warm, with an extra portion of plum jam on the side for added flavor. This dish represents a perfect combination of textures and flavors, making it ideal for a special lunch or dinner.
