It is important to use 80 grams of flour for each egg, but it is good to keep in mind that the size of the egg and the type of flour used (how wet or dry it is) can influence the final amount of flour.
Start by pouring the flour onto a clean, flat surface, forming a small mound. Then, make a well in the middle of the flour; this will be where we crack the egg. Add a pinch of salt over the egg and, using a fork, gently beat the egg, beginning to incorporate the flour from the edges. This is a traditional technique that helps achieve a homogeneous texture.
After you have obtained a more homogeneous mass, start kneading the dough with your hands until it becomes elastic and smooth. Form a ball from the dough and let it rest on the work surface, covered with an inverted bowl, for at least 30 minutes. This step is crucial as it allows the gluten to relax, making the dough easier to roll out.
Once the dough has had time to rest, take it and begin rolling it out with a rolling pin until you achieve a very thin, almost transparent sheet that has the thickness of a knife blade. It is important not to let the sheet dry out completely, as it will break. Let it air for a few minutes, but be sure to keep it flexible.
Once the sheet is ready, use a wavy cutter to cut the dough into squares of about 3 cm by 3 cm. If you do not have a cutter, you can use a knife to achieve the desired shapes. After you have cut the dough, take each square and join two opposite corners, pressing gently to stick them together. Then, repeat the process with the other corners, thus forming a small delicacy.
To finish the dish, bring a pot of water to a boil, add the strained soup, and let it simmer gently without boiling. The pasta is ready when it rises to the surface. Once you are done, serve the hot soup with these delicious pasta, adding grated Parmesan on top if desired, for an extra flavor.
