The oven is preheating to 220 degrees Celsius, and in the meantime, we can prepare our delicious and healthy dough. In a blender, we add the fresh spinach, which must be washed and dried well, along with the flour, eggs, peeled garlic, salt, and pepper. It is important that all the ingredients are well mixed to obtain a homogeneous composition, with a consistency slightly thicker than pancake batter. This combination will provide an intense flavor and a pleasant texture to the final dish.

After obtaining the dough, we take a baking tray, preferably a deep one, and grease it with a little oil or butter to prevent sticking. We place the dough in the tray, being careful to leave the edges hanging over the sides of the tray, to create a sort of border that will hold the delicious filling. This step is essential to achieve an attractive appearance and to prevent the composition from leaking during baking.

Over the dough, we sprinkle the chosen cheese - it can be cottage cheese, feta cheese, or mozzarella, depending on preferences. If the cheese is hard, we can grate it, and if it is softer, we can crumble it with a fork. This will add extra flavor and creaminess. After placing the cheese, pour the spinach mixture evenly over the top, being careful to cover the cheese well and leave a bit of the dough edge visible. The edges of the dough will rise slightly during baking, adding a rustic look to the dish.

We put the tray in the preheated oven for the first 20 minutes at a temperature of 220 degrees Celsius. This time is important to allow the dough to bake well and become slightly crispy. After this period, we reduce the temperature to 180 degrees Celsius and leave the dish in the oven for another 40 minutes. Thus, it will bake evenly, and the aroma of the ingredients will blend perfectly.

In the meantime, we can take care of the spinach roses, an elegant garnish that will surely impress. We take a boiled spinach leaf and carefully roll it up, forming a small cylinder. Then, we take another spinach leaf and wrap it around the first roll, continuing to add spinach leaves around the initial roll until we achieve a generous rose. This process is not only fun, but it will also add a decorative aspect to the final dish, transforming it into a true culinary work of art.

After the baking time has expired, take the dish out of the oven and let it cool for a few minutes before cutting it. It will be perfect to be served warm, alongside a fresh salad or a yogurt sauce.
