Meat - Savory Filling in Braid by Nicoleta D. - Recipia
To prepare a delicious stuffed bread, start by gathering all the necessary ingredients. Make sure you have lard, salt, sifted flour, yeast, sugar, and warm water on hand. The first step in making the dough is to put the ingredients in the bread machine in the specified order: start with the lard, then add the salt, the sifted flour, and finally the yeast mixed with sugar and dissolved in warm water. It is important to follow this order to achieve a uniform and well-risen dough. After you have added all the ingredients, set the bread machine to the dough program.

If you do not have a bread machine, do not worry! The process of making the dough can be done manually. Mix the yeast with the sugar and dilute it with a little warm water, then pour the mixture into the center of the sifted flour, creating a small crater. Add the lard and salt, then gradually pour in the rest of the warm water. Knead the dough with your hands for about 5 minutes, until it becomes smooth and easily pulls away from the bowl and your palms. Shape it into a ball, place it in a bowl, cover it with plastic wrap, and let it rise in a warm, draft-free place for about 2 hours or until it doubles in volume.

Once the dough has risen, roll it out into a rectangular sheet on a lightly floured work surface or directly on a baking sheet. Divide the sheet into three equal parts lengthwise and cut the outer parts into equal strips, not too thick. In the center part, add the filling: start with slices of salami, placed side by side, then evenly sprinkle parmesan cheese or cheese. Add a few cherry tomatoes in the middle of the filling and cover with slices of Emmental cheese. Now comes the creative part: cover the filling by braiding the strips. Start by bringing a strip from the right over the filling, then one from the left, slightly overlapping the strips and ends. Continue this braiding until you have used all the strips.

Once you have finished braiding, carefully transfer everything along with the baking paper to the prepared baking tray. Brush the top with a lightly beaten egg yolk mixed with a little milk, to achieve a golden and appetizing crust. Preheat the oven to 200 degrees Celsius and place the tray inside. Bake for 30 minutes or until the dough is well baked and nicely browned, releasing enticing aromas. After baking, remove the bread from the oven and the tray, letting it cool on a rack. Once cooled, slice the bread into generous pieces and enjoy it with your loved ones!
