We add flour until the dough absorbs it; I used about 800 grams. Sprinkle a handful of flour over the dough, smooth it out with the palm of your hand, and continue kneading. Divide the ready-to-process dough into 20 equal balls. For each ball of dough, roll it out on a floured surface, but roll it out very little, not much, then line up the apple mixture. Then bring the edges together, fold them over, and give it a few friendly pats to stick better. Don’t roll the sheet too much, as it will crack when baked. In a large baking tray lined with parchment paper, place them all (with the sealed edges down) on the middle rack at a temperature of 220 degrees Celsius. They are ready in about 20 minutes, and you can tell they are done by their dark golden color. The apple packets are dusted with sugar.
