These ingredients will form the base of our dough, which we will knead with great patience. In a large bowl, we pour the flour and add the sour cream, oil, eggs, and salt. We mix everything well, using our hands to obtain a homogeneous dough that does not stick to our fingers. After kneading the dough for a few minutes, we let it rest, covered with a clean towel, while we prepare the filling.
For the filling, we start by heating 2 tablespoons of oil in a pan. We add the finely chopped onion and sauté it until it becomes glassy and fragrant. Then, we add the mushrooms, which we have cut into quarters, especially if they are canned. If you are using fresh mushrooms, slice them evenly so they cook uniformly. We season the mixture with salt, pepper, and a little Delikat, and then let everything sauté together for about 5 minutes. In the meantime, we boil the two eggs, peel them, and chop them finely.
After the mushrooms have sautéed and acquired a pleasant texture, we add the boiled and chopped eggs, along with the freshly chopped parsley. At that moment, we also add the sour cream, mixing well to combine all the ingredients. We let the filling simmer for about 3 boils, then take it off the heat and let it cool slightly.
In the meantime, we return to the dough. We roll it out on a floured surface, taking care to obtain a sheet about 1 cm thick. We place the dough sheet in a greased baking dish, then add the mushroom and egg filling, distributing it evenly. We fold in from the ends, bringing the edges of the sheet over the filling to form a well-sealed pie. We brush the top with a little water, so we get a golden and appetizing crust.
We place the tray in the preheated oven at 180 degrees Celsius and wait for the pie to bake until it becomes golden and crispy. Once it is ready, we take the pie out of the oven and cover it with a towel, then with aluminum foil, and again with a towel, letting it sit like that for at least half an hour. This step is essential for achieving a soft and fluffy texture.
