Leek, Cheese and Potato Pie
To prepare a delicious leek and cheese pie, we start by finely chopping the leeks, making sure to remove the tough part of the stem. In a heated pan, we add olive oil and let the leeks sauté over medium heat for about 10 minutes, stirring occasionally to prevent sticking. When the leeks become soft and start to take on a golden hue, we remove them from the heat and let them cool completely, so as not to cook the mixture further.
Meanwhile, we prepare the cheese and boiled potatoes. We grate the cheese, preferably a type of telemea or feta cheese, which will give an intense flavor to the pie, and the boiled potatoes, which we can boil with the skin on to better preserve the aroma. After obtaining the grated cheese and potatoes, we add the cooled leeks to the bowl with the ingredients. In the center of the mixture, we crack the eggs, which will bind all the ingredients and give a fluffy texture to the pie. We mix well, ensuring that all the ingredients are evenly integrated.
The next step is to add a bunch of freshly chopped parsley, which will bring an extra freshness. We also sprinkle grated parmesan for an intense flavor, freshly ground pepper for a slight spice, but I decided not to use salt, as the telemea I chose is quite salty.
Now we prepare the pie crust. We take a baking tray that we grease with butter and dust with flour to prevent sticking. We roll out the first sheet of dough in the tray, ensuring it is evenly distributed. We drizzle it with olive oil, then add the leek, cheese, and potato mixture, spreading it evenly over the entire surface. We cover it with the second sheet of dough, which we lightly score with a knife to allow steam to escape during baking. We drizzle again with olive oil and sprinkle dried oregano and basil on top for an extra flavor.
After completing the preparations, we preheat the oven to 180 degrees Celsius. We place the pie in the oven and let it bake for about an hour on low heat. During baking, the pie will become golden and crispy, and the flavors will combine in a delicious way. Once it is ready, we let it cool slightly before cutting and serving it, so we can savor each piece of this delicacy.
Ingredients: 1 package of pastry sheets 1kg leek 400g dried cheese, I used sheep feta and sheep telemea 2 boiled potatoes 4-5 eggs 3 tablespoons of parmesan 1 tablespoon of parsley olive oil, pepper, salt, basil, oregano, salt.
