Lemons are versatile fruits, full of flavor and aroma, and the recipe I present is ideal for making a delicious syrup, perfect for adding a touch of freshness to your drinks or sweetening various dishes. We start by thoroughly washing the lemons under a stream of cold water, ensuring that we remove any impurities that may be on their skin. After cleaning them, we use a vegetable peeler to peel the lemons, being careful to obtain thin strips of peel without including too much of the white part, which can be bitter.

The obtained peels are boiled in a pot of water, and we add the freshly squeezed juice from the peeled lemons over them. It is important that the juice is well-squeezed to ensure that the intense lemon flavor infuses perfectly into the syrup. As the water heats up, we add the sugar, stirring constantly to help it dissolve completely. It is essential to use good quality sugar to obtain a fine and aromatic syrup.

Once the sugar has completely melted, we reduce the heat and let the mixture simmer on low heat. This is the stage where the flavors meld, and the lemons and sugar release their essences. When the mixture starts to boil, we let it boil for about 20 minutes. During this time, a dense and aromatic syrup will form, and the inviting smell of lemon will fill the kitchen.

After 20 minutes, we take a fine sieve and strain the mixture, separating the syrup from the lemon peels. It is important to ensure that every drop is collected, as the intense aroma will be essential for future preparations. Once the syrup is strained, we carefully pour it into clean bottles that have been previously sterilized to prevent any contamination. After this process, we have obtained an impressive total of 27 bottles of 500 ml and 3 bottles of 330 ml, each filled with delicious and natural lemon syrup.

This syrup can be used in various ways: to prepare refreshing lemonade, sweeten teas, or add flavor to desserts. Regardless of how you choose to use it, the final result will always be an explosion of freshness and flavor. Enjoy your lemon syrup, bringing a touch of sunshine to every day!
