Drinks - Grape Must for Winter by Sidonia M. - Recipia
To prepare a delicious grape drink, the first steps are essential. Start by carefully washing the grapes under a stream of cold water, ensuring that you remove any impurities or residues. After cleaning them, detach the grapes from the clusters, making sure to choose only healthy and ripe grapes to obtain a flavorful and rich must. This process may be a bit laborious, but it is worth every second.

Once you have the grapes, it's time to crush them. You can use a juicer, a fruit press, or even a grape press, depending on the tools you have at hand. If you don’t have special equipment, a tomato machine can be an excellent choice. Make sure to obtain a juice as clean as possible; if the juice contains seeds or other impurities, it is recommended to strain it through a cheesecloth or fine sieve. This step will contribute to a smooth and pleasant texture for the final drink.

Once you have obtained the grape juice, transfer it to a large, wide-mouthed enameled pot. Add the sugar, adjusting the amount according to how sweet your grapes are. Stir constantly, ensuring that the sugar dissolves completely. Then, place the pot on low heat and let it boil for about an hour. At this stage, it is important to remove the foam that forms on the surface, as it can affect the clarity and final appearance of the must.

After the must has boiled for an hour, remove it from the heat and let it cool. It is essential to be patient, as hot must can cause problems during bottling. Once cooled, prepare sterilized and dried bottles, as hygiene is crucial to prevent unwanted fermentation. Carefully pour the must into the bottles, leaving a little space at the top, then seal them tightly. Now you have prepared a delicious drink, full of flavors, that will delight you and your loved ones, perfect for warm summer days or to be enjoyed with your friends on special occasions.
